Bad-Ass Nachos


*All ingredients optional based on what you like : ) People would smell this and literally flock to it in my dorm.

1 box cooked Spanish rice.
1 jar salsa (spicy as desired).
1 jar Con Queso cheese sauce/1 can cheap Nacho soup.
1 can refried beans.
Fresh chopped roma tomatoes.
Fresh chopped green bell pepper.
Fresh chopped white onion.
Sliced chives.
Shredded Mexican cheese (lowfat or normal).
Sour cream (lowfat or normal).
Guacamole if desired.
Tortilla chips.
1 lb. lean ground beef/turkey/steak. (If cooking steak buy chopped up stew pieces so you don't have to bother trimming it). Brown in grill meat spices.

Mix everything together except sour cream or guacamole and heat. Use as dip for tortilla chips. OR lay chips flat on plate - not overlapping - and spoon desired ingredients on top evenly. Melt shredded cheese over top, then add sour cream or guacamole. 


Pumpkin Bread

Experimenting with this healthy version.

1 1/2 c. whole wheat flour
1/2 tsp. salt
1 c. sugar, or 1/2 c. honey
1 tsp. baking soda
1 c. pumpkin puree 
1/2 c. vegetable oil
2 eggs, beaten
1/4 c. water
1/4 tsp. nutmeg
1/4 tsp. cinnamon
1/4 tsp. allspice

Sift together flour, salt, sugar, and baking soda. 

In a separate bowl mix pumpkin, oil, eggs, water, and spices together, the combine all ingredients, but don't mix too thoroughly.

Pour into WELL-BUTTERED loaf pan. (I've learned my lesson on this one - when in doubt, smear more butter or it will absolutely burn or get stuck and half will fall apart. I have to use a ridiculous amount of butter to coat the pan for this).

50-60 minutes depending on pan type, 360 degrees.

Turn out of pan and cool on a rack right away. Don't cut until completely cooled.


No-Bake Cookies

*I haven't made these yet and just found a recipe online. Will let you know how it turns out. Someone specifically requested that I make these for my next bake sale. Based on the ingredients I can tell why people like this lol. 

2 c. sugar
4 TBSP. cocoa
1 stick butter
1/2 c. milk
1 c. peanut butter
1 TBSP. vanilla
3 c. oatmeal
waxed paper

In saucepan bring sugar, cocoa, butter, and milk to boil. Boil 1 minute. 

Mix in all other ingredients. 

On sheet of waxed paper, drop mixture by teaspoonfuls. Leave until cool and hardened.


Crockpot Pizza Casserole

*I have a big crockpot so this lasts a long time and is freaking delicious. Credit for this one goes to "Six Ingredients or Less" Crockpot cookbook by Carlean Johnson. I changed it some and gave it a new name.

2 lbs. lean ground beef/turkey - browned in Italian spices
28 oz. chunky spaghetti sauce
1 pckg penne pasta - cooked
1 pckg turkey pepperoni
3 c. shredded cheddar cheese - lowfat
3 c. shredded mozzarella cheese - lowfat

Mix meat with spaghetti sauce. 

Spray crockpot, layer meat, pasta, pepperoni, cheddar, then mozzarella cheese. Repeat layers of desired thickness at least 3 times, ending in Mozzarella cheese. 

Cover and cook high 2 hours.


Spinach Artichoke Dip

1 c. Italian cheese mix.
1 8 oz. pckg. cream cheese.
1 dollup mayo.
1 clove garlic, minced (use real clove).
Pepper.
14 oz. can artichokes.
Frozen or canned spinach.

Blend all but spinach and artichoke first, then add and mix well.

1 hr. high in crockpot.


Lindsey's Shepherd's Pie

*I liked the sound of Shepherd's Pie, but had no idea how it was made or what was in it. This was my very first recipe, so I just made up what sounded good. This was absolutely addicting with everyone who ever tasted it : ) This recipe was made in a giant cauldron of a pot and lasted forever - feeding hungry men for a long time lol. Obviously I've figured out how to eat healthier since then, but this is tasty.

3 tubes of biscuits.
3 boxes of garlic or sour cream mashed potatoes - instant (and milk and margarine to make them).
1 pckg. shredded cheddar cheese.
3 lbs. lean ground beef - browned.
3 cans of veggies - mixed carrots/corn/peas and green beans work well - drained.

Mix everything and 1/2 the cheese in pot. Put heaping spoonfuls on biscuit halves and top with some cheese.

Microwave until melted.
